Basically I just wanted to use the pepper I had for something, and having roasted two red peppers the other day for the tomato recipe I wanted a contrast in prep and taste. This recipe proved to be the trick — I didn’t do a full on version of it, just using one yellow one, while I also lacked paprika and artichoke hearts. But the rest came together easily enough with smaller portions, while adding the lettuce also helped bulk it up a bit. Good stuff.
