An experiment that turned out very nicely, and was the smell wonderful and rich in the apartment while it was baking. Recipe as provided — give it a whirl!
1 cup Vegetable oil
2 cups Sugar
1 tablespoon Vanilla extract
2 cups Shredded/peeled zucchini
2 1/2 cups Flour
1/2 cup Cocoa
1 teaspoon Salt
1 teaspoon Cinnamon
1/4 teaspoon Baking powder

In a mixing bowl, beat eggs, oil, sugar and vanilla.
Stir in zucchini.
Combine dry ingredients; add to zucchini mixture and mix well.
Pour into 2 greased 8 x 4 x 2 loaf pans.
Bake at 350 for hour or until bread tests done.
