Broccoli-potato soup with greens


And time to get back into the cooking swing of things for a new year. I’ve done broccoli-potato soups before but this one turned out really well — the recipe is here, with soy milk and vegetarian broth being the main substitutions. Still results in a nice overall soup that’s thick but not as heavy as might be thought. The greens used were kale rather than lighter winter greens but it’s still plenty tasty, and I’ve got a nice batch set up for tomorrow.
