Spaghetti with braised kale

While I’ve done a tomato-braised kale pasta dish before, doing one this way — using this recipe — was a first, and turned out very nicely! It’s one of those ‘rewards patience’ dishes, always a good thing — the time spent in finely cutting the kale was key, as was cooking it down along with the onion and garlic. Also, not too heavy considering it’s summer and all — makes a nice later in the evening dinner as was the case here.

    Love the blog.

    This meal, or variations on it, is a staple around our house, esp. in the summer when the greens are flowing freely. One way to kick it up a notch is to saute plenty of hot peppers with plenty of garlic before adding the greens. Somehow the heat of the peppers balances out against the garlic and the cheese, and leaves an intense riot of flavour. Plus it’s such a quick & simple dish.

      Nice idea! I’ll have to keep that in mind — I tend to always do a recipe first straight through as presented to get a handle on it, then consider the variations. Something like that sounds especially tasty, thanks!
